While this recipe definitely took some playing around with, it was beyond worth it. These crispy chipotle seasoned cauliflower tacos absolutely rank in my top ten taco recipes. The cauliflower came out perfectly crispy, while the cauliflower itself was delicate and melts in your mouth. What I love most about this recipe is it is so versatile, whether it is buffalo seasoning, garlic parmesan, chipotle seasoning, a cajun blend, or whatever you are craving that day it is so easy to change out the sauce on the cauliflower with the same delicious outcome.

It’s one of those recipes that feels a little special but is actually really simple to make.

These are perfect for:

  • easy weeknight dinners

  • meatless monday meals

  • taco nights at home

  • casual hosting nights

  • when you want something fun but still simple

This is where you can make them your own.

  • shredded lettuce

  • avocado or guacamole

  • pickled red onions

  • cilantro

  • jalapeños

  • fresh lime juice

  • cheddar cheese

  • cotija cheese 

  • spicy slaw

  • black beans

Just add whatever toppings you love most.  

How to Make Crispy Chipotle Cauliflower Tacos

Ingredients

  • 1 head of cauliflower

  • 1/2 cup flour

  • 1/2 cup milk of choice

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 teaspoon garlic powder

  • salt + pepper to taste

  • 1/2 cup sauce of choice (I love chipotle taco sauce)

  • panko breadcrumbs

Step 1: Preheat the Oven

Heat your oven to 375°F.

Line a baking sheet or baking pan with foil and lightly spray with oil.

Step 2: Make the Batter

In a medium bowl, combine:

  • flour

  • milk of choice

  • paprika

  • cumin

  • chili powder

  • garlic powder

  • salt + pepper 

Mix until smooth.

In a separate bowl, add about 1½ cups of panko breadcrumbs.

Step 3: Coat the Cauliflower

Cut the cauliflower into bite-sized florets.

Dip each piece first into the wet batter, making sure it is fully coated.

Then transfer it to the panko breadcrumbs and coat completely.

Repeat until all cauliflower pieces are covered.

This is what gives them that crispy texture.

Step 4: Bake

Place the coated cauliflower on the prepared baking sheet, making sure the pieces are spread out and not overcrowded.

Bake for 20 minutes.

Step 5: Sauce + Bake Again

Remove from the oven and toss the cauliflower in your sauce of choice.

Place it back in the oven for another 10–15 minutes so it gets extra crispy.

It’s definitely worth the extra few minutes.

Step 6: Build Your Tacos

Warm your tortillas, add the crispy cauliflower, pile on your favorite toppings, and serve right away.

I highly recommend adding extra lime.

Changing it up is the best part about these tacos.
